Absinthe
Nieuwezijds Voorburgwal 171 (777 48 70). map
Absinthe, though highly fashionable in the 19th century, became linked with permanent brain damage in the beginning of twentieth century. The drink was blamed for Van Gogh's ear-cutting incident for example, and all this led to a worldwide ban. The Absinthe bar recreates some of the resulting mystique, hopefully without detriment to your personal health. DJ's during the weekend
.
Open daily 8pm-3am [4am weekends].

Bep
Nieuwezijds Voorburgwal 260 (626 56 49). map
bepgevel.jpg (6503 bytes)Bep attracts a crowd of young and hip creatives and media types, as do a lot of the bars in this area; small scale pubcrawls between the neighboring bars seem to be the fashion. Bep is the more composed, mostly due to the well lit interior and the light colors. It isn't very spacious and with the bar located in the middle of the floor it gets crowded during weekends. In summer everyone spills out onto the sidewalk. Bep offers inexpensive food until 10.30pm.
Open noon-1pm (3am weekends).

Bubbles & Wines
Nes 37 (422 33 18). map
Amazing selection of open wines and champagnes in a classy environment, truly a first for Amsterdam. A nice touch is the possibility to order a tasting 'flight', three small glasses of a particular type of wine. So, what would you like with your flight of champagne? Caviar, blinis, cheese plates and the house special 'bee stings' of course! Not to be missed!
Open Mon-Sat 3:30pm-1am, Sun 2pm-9pm.

Chocolate Bar
1e van de Helststraat 62 (675 76 72). map
Trendy bar-cum-restaurant in 'Pijp' district, with hip seventies interior and matching cool crowd. Definitely one of the places where you would want to be seen in this neighborhood, so tends to get cramped, and ordering might take a little while. Lunch, dinner & cocktails, and DJ's during the weekends.
Open daily 10am-1am (3am weekends).

Diep
Nieuwezijds Voorburgwal 256
(420 20 20). map
In stark contrast with Bep, Diep sports a camp brown interior complete with crystal chandeliers and disco lighting. Well stocked bar and a turntablist, tucked away in a small booth. As with Bep, lots of young creative barhoppers.
Open 5pm-1am (3am weekends).

Finch
Noordermarkt 5 (626 24 61). map
Hip neighborhood hangout in the Jordaan bordering the Noordermarkt square, the focal point of the Jordaan area. The square hosts a biological market on Saturdays and a flea market on Mondays, and during market hours Finch is packed. Other days it's a mellow bar with a cool interior, loungy tunes, and good food. Nice sidewalk terrace during summer.
Open 11am-1am (3am weekends).
